Easy peasy. All you need is three ingredients and a bowl!
Large bowl
1 cup Sugar
1 cup Salt (we buy the large boxes of coarse kosher salt)
Raw chicken, pork, or any white meat
I usually buy the large pack of chicken because I like to buy in bulk for meal planning and prep, so this trick works for that large pack. Usually about 5 or 6 large chicken breasts. It can also be used on frozen meat! We thaw meat in the brine all the time. If you get a smaller amount, just decrease your salt and sugar.
All you do is pour the salt and sugar into the large bowl, put enough warm water to dissolve it, then add the meat. Put enough water over the meat to cover and leave on the counter! Minimum time for the brine to work is 20 minutes, we have left it on the counter for a couple of hours at most. You can then season and cook or vaccum seal and freeze it.
Voila! Juicy chicken in the oven, on the grill, or however you like to cook it.
