What is Indian Raita and why does Mel promise I'll love it?

Indian raita is a yogurt based condiment that can act as a dip or side and is especially good when you pair something spicy with it like biryani or kebabs. It's perfect when you want something cooling and you can add so many different things to it - tomatoes, onions, cucumbers, mint, spinach, bell peppers, pineapple, the options are endless!

For this one we did a traditional Raita to go with our dinner.


We were making Chicken Biryani when we discovered this lovely dish. It's so easy to make and is full of fresh ingredients!

Highlights -

  • If you have a garden this is the perfect thing to use up veggies

  • Totally vegetarian and keto friendly

  • Can be used as a cooling side dish or a dip with Pita chips or sliced veggies

  • Raita can be made the previous night or in the morning and refrigerated easily for 8-10 hours




This is our traditional Raita that we had with our Chick Biryani (another blog post on that soon!)


Ingredients

  • 3 cups Thick Greek Yogurt (great protein source)

  • 1 teaspoon Salt

  • 1 teaspoon Cumin Powder

  • 1 Green Chilli finely chopped (or Serrano Pepper optional)

  • 1/2 teaspoon Red Chilli Powder or cayenne pepper

  • 1 Onion finely chopped (small)

  • 2 Persian Cucumbers finely chopped

  • 1 Tomato finely chopped (large )

  • 1 Green Bell Pepper finely chopped

  • 1/2 cup Loosely packed Cilantro finely chopped



I put all of the veggies in the Manual Food Processor after a rough chop, just to get them to fit. Saved me so much prep time! The mini scraper helped me get every last tasty bit out.


Instructions

  • Use the manual food processor to chop all of the veggies

  • Whisk together yogurt, salt, cumin powder, green chilli and chilli powder till smooth. Add all the vegetables and mix well. Refrigerate for half an hour before serving. You will notice after refrigeration that the veggies will leave a little water. Just give it a quick mix and you are ready to go.



I used the large batter bowl to mix and store the Riata. Did you know that the Manual Food Processor has a storage lid? I did extra veggies for salsa tomorrow and stored them right in the processor bowl!
